One of the most common and most loved variety of muffins. This is the first of several muffin recipes which we will be posting over the coming weeks. Such a simple recipe you don't even need an electric mixer!
The Ingredients:
190g NEILL'S® Plain Flour
160g Caster Sugar
1 Egg
85ml Vegetable Oil
130g Fresh Blueberries
0.5tsp Salt
2tsp Baking Powder
85ml Milk
The How-To:
Preheat oven to 180c
Line a muffin tray with 7 or 8 large muffin cups
Sieve together the flour, sugar, baking powder and salt in a large bowl.
In a smaller bowl mix together the egg, milk and oil
Pour the wet mix into the dry mix and fold together.
**Very important not to over stir. Just mix together enough to combine everything**
Fold in the blueberries
Fill muffin cups just over 3/4 full and bake in the centre of the oven for 25 mins.
Check them by inserting a skewer. If it comes out clean they are ready.
You're Done!
