Blueberry Muffins

One of the most common and most loved variety of muffins. This is the first of several muffin recipes which we will be posting over the coming weeks. Such a simple recipe you don’t even need an electric mixer!

The Ingredients:
190g NEILL’S® Plain Flour
160g Caster Sugar
1 Egg
85ml Vegetable Oil
130g Fresh Blueberries
0.5tsp Salt
2tsp Baking Powder
85ml Milk

The How-To:
Preheat oven to 180c
Line a muffin tray with 7 or 8 large muffin cups
Sieve together the flour, sugar, baking powder and salt in a large bowl.
In a smaller bowl mix together the egg, milk and oil
Pour the wet mix into the dry mix and fold together.
**Very important not to over stir. Just mix together enough to combine everything**
Fold in the blueberries
Fill muffin cups just over 3/4 full and bake in the centre of the oven for 25 mins.
Check them by inserting a skewer. If it comes out clean they are ready.
