Donut Mini Muffins !!!

These donut mini muffins are perfect if you don’t want to go through the mess and hassle of deep frying. There the best mini muffin recipe I have come across so far. So try it out and let us know what you think!

The Ingredients:
The Donut
50g Melted Butter
100g Caster Sugar
0.5tsp Nutmeg
120ml Milk
1tsp Baking Powder
130g NEILL’S®Flour

The Coating:
120g Caster Sugar
50g Melted Butter
2tsp Cinnamon

The How-to:
Preheat oven to 180c
Line muffin trays with between 20-24 mini muffin cases
In a bowl mix the butter, nutmeg and sugar together until dissolved
Add the milk and mix together
In a separate bowl sieve together the flour and baking powder.
Add the dry mix into the wet mix and stir together (do not over stir)
Fill each mini muffin case about 3/4 full.
Bake in the centre of the oven for 15-20 mins.
Remove from oven and allow to cool. Remove each from their case.
Mix the cinnamon with the sugar to create cinnamon sugar
Quickly dip into the melted butter and roll in the cinnamon sugar until coated.
Place on a cooling rack and allow to dry.
