Sweet & Delicious Cinnamon Raisin Muffins

These muffins are so simple and quick to make. Perfect to make if you have friends coming over for coffee.

The Ingredients:
 Muffin
210g Caster Sugar
120g Melted Butter
100ml Water
170g Raisins
260g NEILL’S®Plain Flour
1tsp Baking Powder
1tsp Ground Cinnamon
0.5tsp Nutmeg
0.5tsp Salt

Topping:
110g Icing Sugar
1tsp Vanilla Extract/Essence
2tbsp Milk
0.25tsp Ground Cinnamon

The How-To:
Preheat oven to 180c
Melt the butter in a large bowl and mix in the water
In a separate bowl sieve the flour, sugar, baking powder, cinnamon, nutmeg and salt together
Fold the flour mix into the butter mix. Do not over-stir
In a small bowl toss the raisins in about 1tbsp of flour to coat them. This stops them sinking to the bottom of the muffins when cooking.
Fold the raisins into the mix.
Spoon the muffin batter into 12 muffin cases in a muffin tray and bake in the centre of the oven for 17mins or until a skewer inserted comes out clean.
Leave to cool and then mix up the topping in a small bowl and drizzle over.
