Yummy Lemon Traybake

This is a fantastic family dessert as there is always plenty to go around. Can be enjoyed warm or cold. Although I prefer straight out of the oven! Consistency similar pie!



The Ingredients:
The Base:
80g Icing Sugar
190g NEILL’S®Plain Flour
170g Butter
The Filling:
320g Caster Sugar
3 Eggs
3tbsp Flour
4tbsp Lemon Juice

The How-To:
Preheat oven to 180c
Beat the butter until smooth and stir in the icing sugar, then stir in the flour.
Form into a dough.
Line a deep baking tray (20x30cm preferably) with baking paper and press the dough evenly into this.
Bake in the centre of the oven for 20 mins.
While this is cooking whisk the eggs together and slowly add the caster sugar.
Whisk in the flour and then lemon juice.
Beat until smooth and frothy.
Pour this mixture onto the hot base and place back in the oven for 25 mins.

Allow to cool slightly, slice and serve.
