Banana, Cherry & Brown Sugar Pancakes

We all love pancakes but what if those pancakes had some more of our favourite flavours? Pancakes are so versatile that you can add many ingredients and a lot of them work. We have come up with a winning combination in our opinion and testing what seemed like slightly too many pancakes. Haha.

Banana, Cherry & Brown Sugar Pancakes – Banana works so well in pancakes as the heat starts to make the banana go gooey which keeps your pancakes moist inside. The brown sugar helps caramelise the bananas too. The cherries add extra sweetness and a splash of colour.

The Ingredients:
200g NEILL’S® Plain Flour
3tsp Baking Powder
2tbsp Caster Sugar
1tbsp Soft Brown Sugar
0.25tsp Salt
330ml Buttermilk
2 Ripe Bananas (around 130g)
Some Soft Brown Sugar for Sprinkling
10 Glacé Cherries

The How-To:
Sieve the flour, baking powder, salt and and caster sugar in a large bowl.
Fold through the soft brown sugar.
Cut the banana into small pieces.
Cut the cherries into small pieces.
Add the butter milk to the flour mixture and add the chopped bananas.
Fold the mixture together just enough to mix the ingredients, do not over stir.
Heat a non stick pan on a low heat with just a tiny bit of oil.
Place 3tbsp of the pancake batter into the centre of the pan.
Sprinkle a few pieces of chopped cherry on top and sprinkle with about 0.5tsp of brown sugar.
Once bubbles start to form on the surface it is normally sign it is time to turn the pancake.
Flip the pancake over and cook until golden on both sides.
Best served warm.
