Strawberry Protein Muffins

 

 

Whether we’re training or just trying to eat a little healthier one of the hardest things to overcome is the cravings for something sweet. Of course there are options. But these can be expensive and limited. We have a solution. Using MyProtein Muffin Mix you can create a huge variety of wonderful muffins and we are going to share some of these recipes with you over the next few weeks.

The first one we are going to share is for a Strawberry protein muffin. These muffins contain some low fat greek yoghurt which keeps them nice a moist. This recipe makes 5 normal sized muffins which can be frozen or eaten within a day or two. Store in an airtight container.

 

 

The Ingredients:
100g MyProtein Muffin Mix
100g Low Fat Greek Yoghurt
1tbsp Milled Flax Seeds (Optional)
50ml Skimmed Milk
2tbsp Coconut Oil
A Few Drops of Strawberry FlavDrops

Recommended Equipment:
Sage Appliances Scraper Mixer Pro
Spatula

 

The How-To:
Preheat the oven to 180c.
Weigh out the muffin mix and add to a mixing bowl.
Add the yoghurt, milled flax seeds (optional), skimmed milk, coconut oil and FlavDrops (or other flavouring).
Gently mix the ingredients together until just combined.
Divide the mixture out between 5 muffin cases and bake in the centre of the oven for 15 mins.
Allow to cool slightly before enjoying.
These are incredible served with some MySyrup (our favourite is butterscotch).
